Made these amazing rocky road bars on Sunday from the Baking Bits blog. They looked like they'd just be homemade brownies with yummy toppings, but they turned out extra gooey and fudge-like. Wow.
We also tried out a recipe from my cousin, Jessie, on Monday. It's so good, I just had to share:
Scalloped Ham and Potatoes in the Crockpot
8-10 medium potatoes, peeled and thinly sliced
2 onions, peeled and thinly sliced
6-7 slices of ham (we just bought a small hunk and used all of that)
1 c. shredded cheddar cheese (we doubled this amount to make it extra cheesy)
1 can cream of mushroom soup (we also doubled this, since I like my scalloped potatoes to be a bit creamier)
paprika (we used smoked, since that's all I had in the house)
Pile half of the potatoes, onions, and ham in the bottom of a crockpot. Top with 1 c. cheese, (and one can of soup if you use two), season with salt and pepper. Pile remaining potatoes, onions, and ham on top of that. Pour soup over top, (add an additional c. of cheese, if desired), and sprinkle with paprika.
Cook on low for 8 hours or on high for 4 hours.
I think the cheddar cheese (especially the extra cup!) made it extra savory. We froze half of it immediately, but we polished off the first half already so we may need to take the other half out soon!
